1. Wash the fillet, pat dry with a paper towel, and place on a sheet of foil (each piece separately). Add a pinch of salt and pepper to taste.

2. It's better to use small tomatoes. Wash them, dry, and cut in half. Combine in a deep bowl with lemon juice, olive oil, garlic pressed through a garlic press. Add capers and lemon zest, and a pinch of herbs if desired. Gently mix everything together.
