1. Red beans should be soaked overnight.

2. Cook the swollen beans over low heat. If the water evaporates, don't worry—just add more water. It's better to add cold water. If cooking red beans in a pressure cooker, this process will take about 1 hour.

3. While the beans are cooking, prepare the other ingredients. In particular, slice the onion into rings or half-rings.

5. When the beans are ready, pour vegetable oil into the pot and add onion rings. If you have special Georgian bread, shoti, break it into pieces and add it to the pot as well. If not, no problem—it's perfectly fine to do without it. Next, add the cooked beans and sprinkle with chopped herbs. Season with salt, pepper, and other spices. Place the pot in the oven and simmer the beans for 4 minutes if using bread, or 10 minutes if without bread.
