
Red beans with chicken

Peel the onion, leek, tomato, and garlic, rinse, and chop.

For the marinade, mix together all ingredients except water, chicken, beans, sugar, and vegetable oil.

Cut the chicken into portion pieces, rinse, place in the marinade, and let it sit for 2.5 hours.

In a deep heavy-bottomed pot (a cauldron or deep skillet), heat vegetable oil over medium heat, add brown sugar, and stir with a long dry metal spoon. When the sugar melts, it will become liquid, then foamy, and begin to change color.

When the sugar turns amber in color, add the pieces of marinated chicken to it and immediately stir to coat all the chicken meat with caramel.

Now remove the lid and increase the heat to evaporate almost all of the liquid. This will enhance the chicken's flavor and give it a nice color.

Pour 2 cups of water into the container where the chicken was marinated, to collect the remaining marinade. Pour this water into the pot and add the drained canned beans.

Stir the contents of the pot, bring to a boil, cover with a lid, and simmer over low heat for 20 minutes, until the chicken is fully cooked.

Then taste the dish and add salt if necessary. If the sauce seems not thick enough, continue cooking the dish uncovered by removing the lid from the cauldron.
