
Red beans with mushrooms

Prepare all the ingredients.

Wash the mushrooms and cut them into 2-4 pieces. If the mushrooms are large, you can chop them into cubes or slices. Cut the onion into cubes, and peel the garlic and press it through a garlic press.

Rinse the canned red beans to remove the thick liquid they were stored in. Drain in a colander and let excess water drip off.

Heat a skillet with vegetable oil over medium-high heat. Add the mushrooms and cook for 3-4 minutes without stirring.

When the mushrooms have slightly settled and reduced in size, you can stir them. Cook for another 3–5 minutes until golden brown and excess liquid has evaporated.

Reduce the heat and add the onion. Fry for a couple more minutes until soft and translucent.

Add the canned beans and mix everything together.

Add tomato paste and pour in water. Bring to a boil, season with salt and pepper, and add minced garlic.

Cover the skillet with a lid and simmer the beans with mushrooms over low heat for about 15–20 minutes. Stir occasionally. If the water evaporates too quickly, you can add a bit more.
