Description

Lobio is not the name of a dish; in Georgia, this is what they call beans. There are many ways to prepare lobio, as various ingredients can be added to bean dishes: walnuts, bacon, meat, and so on. From this recipe, you will learn how to make it.

    It's better to soak the beans for at least two hours before cooking. Then drain the water, transfer the beans to a pot, pour about 1.5 liters of water, and cook over medium heat until tender. When the beans are almost done, add 2/3 teaspoon of salt and bay leaves.

    Prepare the spices, herbs, and vegetables. Peel the onion and garlic. Utskho-suneli is blue fenugreek; if you can't find this spice, you can substitute it with khmeli-suneli.

    Finely chop the onion and sauté in vegetable oil until lightly golden. Finely chop the cilantro.

    Place garlic, cilantro, pepper, utskho suneli, coriander, and a pinch of salt into a mortar.

    We drain the bean broth into a separate container. Grind the beans together with the crushed spices and fried onions. If the mixture turns out too thick, add some of the bean broth to achieve the desired consistency. A glass of broth is quite enough, in my opinion.

    Traditionally in Georgia, lobio is served in small clay pots. Transfer the lobio into the pot and cover it with a flatbread lid. Place in a preheated oven at 180-200 degrees for about 10 minutes.
