Description

It pairs beautifully with tea and coffee. Crumble is not the name of any one particular dish, but rather a way of cooking. The technique is that certain ingredients are baked under a crumb topping. As a result, those ingredients stay nice and juicy underneath, while a tasty crispy crust forms on top. Here we have a vegetarian eggplant crumble—quite popular in England, by the way. I recommend giving it a try; luckily the ingredients are always easy to come by. Good luck. You can serve it with tea or coffee.

    Eggplants should be cut into thin (5 mm) slices and salted. Let them sit under salt for about 15 minutes. This is done so the eggplants won’t taste bitter later.

    Then quickly fry the eggplants in vegetable oil — literally 2–3 minutes over medium heat. Using a paper towel, remove all the excess fat from the eggplants.

    Let’s move on to preparing the main part of the crumble—the crumbs. To do this, mix grated cheese, flour, oregano, salt, butter, and breadcrumbs. Rub everything together with your fingertips into crumbs until it reaches the same consistency as in the photo.

    Take a baking dish and grease it with oil. Arrange a layer of fried eggplant, then place tomatoes cut into medium pieces on top.

    Place a little sliced cheese on the tomatoes and sprinkle with oregano.

    Place another layer of eggplants on the cheese, then sprinkle everything with our crumb topping. Put it in the oven and bake for 25 minutes at 190 degrees.
