
Dolma (stuffed grape leaves)
Description
The dish is prepared without unnecessary complications. Heat oil in a medium saucepan over medium heat. Sauté onion until soft. Add rice and hot water to cover. Cover with a lid and simmer over low heat until rice is half-cooked, about 10 minutes. Remove from heat and mix in tomato paste, blackcurrant, pine nuts, cinnamon, mint, dill, allspice, and cumin. Let the mixture cool. Prepare a large pot. Rinse grape leaves in warm water, drain, and trim the stems. Place about 1 teaspoon of the cooled rice mixture in the center of each leaf. Fold in the sides, then roll into cigar shapes. Place them into the prepared pot. Repeat with remaining ingredients. Pour in hot water.
