Description

It goes perfectly with tea and coffee. If you love baked goods made with cottage cheese, my advice is to make a Kraków sernik. A classic Polish cottage cheese cake with very little dough and plenty of cottage cheese. I suggest preparing it in one of the traditional ways. Try it and you will be amazed by the taste of this dessert. It is similar to a cottage cheese casserole, cottage cheese soufflé, or cheesecake, but at the same time sernik has a singular, incomparable flavour. Of course, cottage cheese is best when it is homemade and full-fat, with the full depth of natural flavour. The Kraków sernik takes a bit of effort, but it is worth it. The bake is ready. Serve it at the table.

    Prepare the ingredients for making Kraków cheesecake.

    Pour sifted flour, salt, confectioners’ sugar, and vanilla sugar into a bowl.

    Mix the flour, confectioners’ sugar, salt, vanilla sugar and butter until crumbly. Add the egg and ice water.

    Combine all the dough ingredients into a ball; there is no need to knead for long. Cover with plastic wrap and chill for one hour.

    Prepare the filling. Put the cottage cheese into a bowl. Add the yolks of two eggs and sugar.

    Beat these ingredients with a mixer until smooth and creamy.

    Take the chilled dough out of the refrigerator. Cut off one third and put it back in the fridge. Roll out the remaining two thirds of the dough into a sheet. Line the pan with it, prick with a fork, and put it in the oven. Bake at 175–180°C for 10–12 minutes.

    After that, take the baking dish out of the oven and spread the cottage cheese filling on the dough.
