Description

Perfectly pairs with tea and coffee. A kovrizhka is essentially a cake, only with a gingerbread flavor. But does it really matter? These are all just conventions. Every homemaker prepares each dish in her own way. So call it whatever you like, as long as it tastes good.

    First, you need to rub the flour into softened butter. You can use any flour, but I used spelt flour. This type of flour is healthier. It's milled from ancient varieties of wild wheat that our ancestors in Russia used to eat—and that's why they were healthy! There's no need to sift this flour, as it's whole grain. Just mix it with your hands.

    Now beat the eggs with milk and sugar. Add cinnamon, vanilla, and baking powder. Add a pinch of salt. Gradually add flour to this liquid mixture, stirring constantly to avoid lumps.

    Add a can of cooked condensed milk to the egg-flour mixture. You can buy ready-made condensed milk or cook it yourself. To do this, place a tin can of regular condensed milk into a pot of water and simmer over low heat for 4 hours. Then add cocoa powder and chopped or whole nuts—your choice. Add candied fruits or chopped dried fruits as well. Mix everything thoroughly and pour into a greased deep baking dish.

    Place the gingerbread cake into the preheated oven at 180 degrees. After 20 minutes, reduce the temperature to 150 degrees. After another 25 minutes, remove the ready, aromatic cake from the oven. The gingerbread cake can be served hot or cold. Cut it into pieces, brew some tea, and treat your family to this delicious dessert!
