
Vegan Banana Gingerbread
Description
Perfect with tea and coffee. Gingerbread is very easy to make. The fasting version is ready in no time at all! You won't even have time to start cooking before everything is already on the table. This is not a sponge cake that you have to worry about, fearing it won't rise. Gingerbread is much simpler. Serve warm or chilled. Perfect with tea.

Step 1

Peel the bananas. Cut them into pieces and mash with a fork or blender. Add half a cup of sugar, vanilla, and a spoonful of cinnamon.

Grind the nuts. Sift the flour. Add a pinch of salt, baking powder, and the remaining half cup of sugar. Pour in sunflower or olive oil and squeeze in orange juice, or use store-bought juice. Mix everything until smooth.

Take a deep baking dish. Grease it with oil. Pour the resulting mixture into it. Place in a preheated oven at 180 degrees for half an hour.

After half an hour, open the oven and check if the cake has started to brown. If yes, it's ready to be taken out; if not, bake for another 10 minutes at 150 degrees. Sprinkle the finished cake with powdered sugar and cut into pieces.
