1. Take milk, it must be at room temperature, not cold or hot. Add a teaspoon of sugar and yeast to it, mix and set aside so the yeast can start working.

2. Beat the egg well with a mixer, gradually adding 2 tablespoons of sugar.

3. Next, take the butter or margarine and melt it in a water bath or microwave until liquid, but do not overheat.

4. For those who didn't know, here's a little secret: to make the dough rise better, sift the flour 2-3 times. This way it will absorb oxygen and the dough will rise better.

5. Choose a container in which you will mix the dough. Pour the already swollen yeast and water into it (remember, the water should be at room temperature). Then gradually add the flour in small portions and add half a teaspoon of salt. Mix thoroughly, and during the process, add the previously beaten egg with sugar, as well as melted butter (or margarine). Next, knead the dough until smooth. If using a mixer, 5 minutes will be sufficient; if kneading by hand, spend no less than 15 minutes.

6. Let the finished dough rest in a small pot in a warm place (30-40 minutes). You can use a multicooker, previously greasing the bottom of the bowl with sunflower oil (no need to grease the sides!) and turning on the appropriate function.

7. After that, place the dough onto a work surface previously dusted with 100 grams of sifted flour. Knead thoroughly until it no longer sticks to your hands, then let it rest for 10 minutes.

8. For convenience, I divide the dough into 2 parts and roll them out one at a time. Choose the dough thickness to your preference; I try to make it as thin as possible because I like it better that way. I cut the rolled dough sheet into strips 5-6 cm wide (depending on the size of the cutlets). Then I cut these strips into several pieces.

9. I place a patty in the center of each piece, carefully seal the edges. I put the prepared patties in dough seam-side down on parchment paper to prevent the dough edges from coming apart. Then I place the baking sheet in an oven preheated to 180 degrees for half an hour.

10. To make the buns golden and shiny, mix the egg yolk with milk and brush the buns with this mixture 5 minutes before they are done. This will add shine and color, ensuring perfectly baked meat-filled buns.
