To be honest, I even have serious doubts about the industrial bread sold everywhere in stores—the taste and appearance give me no reason to be optimistic. And don't even get me started on store-bought breadcrumbs! A friend of mine, who works directly in the bread industry, claims they're made from waste even mice turn their noses up at. I don't know if that's true, but I've been making my own breadcrumbs for a long time now—we always have leftover bread that can be put to good use for this simple task. Preparing cutlets with homemade breadcrumbs won't burden you much—yes, it'll take an extra 10-15 minutes, but I assure you, the result will be impressive! Cutlets coated in homemade breadcrumbs turn out much tastier, and their color is noticeably better too. Anyway, give it a try—I think you'll be pleased.

    Cut the loaf into small cubes. Spread them out on a baking sheet and place in a preheated oven for 10 minutes—they should become slightly golden, but not browned.

    Crush the cooled croutons in a blender or using a meat grinder.

    Wash the meat, dry it, and remove the tendons. Pass it through a meat grinder twice.
