
Cutlets
Description
The dish is prepared without unnecessary complications. These cutlets will not only perfectly diversify your weekday dinner but also come in handy for serving at a New Year's table. The meat cutlets turn out juicy and savory thanks to the filling. The crispy outer layer complements everything perfectly. If you don't like this filling, you can replace it to your taste—perhaps egg with green onions, sautéed mushrooms, or many other options—but the top white layer should remain. Otherwise, they won't be snowdrifts. The ready dish can now be served.

Prepare all the necessary ingredients for making "Sugroby" cutlets. Peel the onion and wash the vegetables.

Place the ground meat into a bowl. Grate the onion on a coarse grater and add it to the bowl with the meat. Carefully separate the eggs into yolks and whites, adding the yolks to the meat mixture. Season with salt and pepper, then mix thoroughly. Beat the meat mixture well by gathering it in your hand, lifting it above the bowl, and dropping it back down. Repeat this process 10-15 times until the mixture becomes denser.

Grate the cheese on a medium grater, finely chop the tomato, mince the garlic, and place everything in a bowl. Add mayonnaise, season with salt, and mix well.

Divide the ground meat into six equal portions and place them spaced apart on a baking sheet lined with parchment paper or a silicone mat. With wet hands, press out the center of each portion, leaving the bottom untouched, to create a depression in the middle.

Fill the indentations with the cheese and tomato filling. Place the baking sheet with the patties in a preheated oven and bake at 180 degrees for 25 minutes.

Add a pinch of salt to the chicken whites and beat until stiff peaks form, like meringue. Then take out the patties and cover them with the beaten whites. Place the baking sheet with the "Sugrob" patties on the lower rack of the oven and bake for 5 minutes. Cover the patties with foil, making sure it doesn't touch the surface of the mixture, and continue cooking for another 5–10 minutes. During this time, the meringue should cook through but remain white thanks to the foil. If necessary, bake a little longer.
