
Cutlets with cheese inside

To make cutlets just like my grandmother's, we'll take chicken fillet and 2 chicken drumsticks—the drumsticks are needed to make the cutlets more juicy. By the way, it's better to use country chickens for cutlets, preferably older ones. They aren't suitable for frying, as they need to be cooked for quite a long time to become tender, but cutlets made from them are absolutely delicious. So, we need to wash the meat, cut it into pieces, and also peel and chop an onion.

If the meat has skin, don't remove it—just pass it through the meat grinder 2-3 times together with the rest of the meat; all the fat from the skin will go into the patties. Don't forget to grind the onion together with the meat.

Cut the loaf into slices or break it into pieces and soak in milk for 15 minutes.

Now we take the cheese. My grandmother, due to shortages, used to add homemade cheese to the patties, but since we don't suffer from lack nowadays, I decided to use my favorite Parmesan. The cheese should be grated on a coarse grater.

To the bowl with the minced meat, add one egg, softened bread, grated cheese, herbs, one teaspoon of salt, and pepper. Mix everything well.

Now you need to place the pan with oil over the heat and wait for it to heat up. Meanwhile, you can shape the patties. Place the patties onto the heated pan and fry on both sides over medium heat until golden brown crust forms.
