
Minsk-style cutlets
Description
The recipe won't take much time. The dish turns out not only delicious but also quite filling; you can serve it with any side dish of your choice or on its own with fresh vegetables. Tender chicken mince with mushrooms is a perfect combination—these patties will surely win you over. You can use any mushrooms you like, both fresh and frozen. To enrich the mushroom filling, I suggest adding grated cheese, butter, and fresh aromatic herbs. Serve hot.

1. Prepare all the necessary ingredients. If using frozen mushrooms, thaw them beforehand and squeeze out excess liquid.

2. To the chicken mince, add one egg, semolina, 2 tbsp of milk, salt and pepper to taste.

3. Mix thoroughly and let stand for 15-20 minutes.

4. Meanwhile, prepare the filling. Finely chop the mushrooms, sauté them, and let cool. Then mix with soft butter, grated cheese, and fresh herbs. Add salt to taste and mix well.

5. Divide the minced meat into eight equal parts and place them on a surface covered with plastic wrap; I used an oven bag. With a wet hand, shape each portion into a patty, then place the filling in the center.

6. Then, with wet hands, lift the portions and shape them into oval or round patties. Roll them one by one first in flour.

7. Then in the beaten egg with the remaining milk and a pinch of salt.

8. Finally, coat evenly on all sides with breadcrumbs.

9. Fry the patties on both sides over medium heat until a golden crispy crust forms.
