
Kiev-style cutlets with mushrooms
Description
The dish is prepared without unnecessary complications. Kiev-style cutlets with mushrooms can be served either with salads or with side dishes. In public catering, cutlets are usually served with mashed potatoes, but I prefer serving them with a salad, as the cutlets are already quite filling. It's better to serve them with lighter side dishes. The ready dish can now be served at the table.

To prepare Kiev-style cutlets with mushrooms, we need to make the filling. To do this, chop the onion and sauté it in vegetable oil.

Add sliced mushrooms to the fried onions. Sauté the mushrooms together with the onions. Add salt and pepper.

Cut the chicken fillet into thin slices. From one half, I got 3 slices.

Pound the meat with a mallet. Season with salt and pepper. Place a piece of butter on one edge of the meat slice. Add some sautéed mushrooms.

Roll it into a roll. The chicken meat is pliable. If you squeeze such a roll in your hands, it will shape well, enclosing the filling inside the roll.

Form all the rolls in the same way. Prepare the breading. Mix 2 eggs with 3 tablespoons of milk and whisk well to make the batter. In a separate bowl, prepare flour and breadcrumbs. Dip each roll into the egg batter, then into the flour, then again into the batter, and finally into the breadcrumbs. Shape into a patty. Fry on a skillet with vegetable oil, making sure the oil level reaches halfway up the patty.

The cutlets should only be browned in the fryer. Then place the cutlets into a baking dish. Bake in a preheated oven at 200 degrees for 15 minutes. This way we can be sure they are fully cooked through.
