
Papartsi-kvietka Cutlets
Description
The recipe won't take much time. First, prepare the filling for our patties. Grate the cheese on a medium grater and mix in finely chopped butter. Stir until smooth, then place in the refrigerator. Now prepare the minced meat. Pass the chicken fillet and onion through a meat grinder twice, add an egg, salt, and mix thoroughly. Now shape the patty. Place a flat patty made from the chicken mixture onto the work surface. Shape the cheese-butter mixture into a small sausage and place it on top of the meat patty. Make another, slightly smaller patty from the meat mixture and cover the cheese with it. Beat one egg by hand and dip the patty into it. Then coat the patty in breadcrumbs. Shape it into a nice oval form and proceed to make the next patty. It's better to dip your hands in water before shaping each patty, so the meat won't stick to your fingers. Heat a frying pan well with vegetable oil. Fry the patties on both sides, then transfer them to a baking tray or a large heatproof dish. Make sure the patties don't overlap. Once all the patties are fried, place them in the oven and bake at 170°C (340°F) for 30 minutes. You can serve any side dish you like. An important advantage of these patties is that they don't require any additional sauce, as a delicate creamy cheesy filling will ooze out when cut. Serve hot.
