Description

The dish is prepared without unnecessary complications. The patties turn out juicy, tender, and extremely delicious. And the aroma that spreads around is simply irresistible! I recommend preparing the minced meat at home in advance, which will significantly save you time outdoors. You can serve these patties with fresh or grilled vegetables, in pita breads, or in hamburger buns. Don't forget to add sauce—this will only enhance their flavor. Using pork fat in the recipe ensures the patties stay juicy and tender; meat lovers will be delighted. The dish is ready to be served.

    Prepare all the ingredients from the list. You can use any meat; I'm using pork today. Use spices to your taste; I'll be using Adyghe salt.

    Wash the meat and pat it dry. Pass the meat, onion, and garlic through a meat grinder.

    Add the diced fatback.

    Add salt and your favorite spices to taste. Optionally, you can add some aromatic fresh herbs.

    Then beat the meat mixture against the table or a container. To beat the mixture, take a portion in your hand and forcefully throw it back into the bowl, repeating this several times (usually for 4-5 minutes). This process makes the mixture more uniform, loose, and juicy, improves its texture, enriches it with oxygen, and helps spices distribute better, ultimately enhancing the flavor and texture of the finished patties. Cover with plastic wrap and let it rest for 30 minutes or longer.

    Light the wood and prepare hot coals. Grease your hands and the grill grate with vegetable oil. Shape the patties to the desired size. Place them on the oiled grill grate.

    During the process, flip them several times. I covered them with a lid to speed up cooking.

    You need to flip the cutlets frequently; this will help them cook evenly and stay juicy inside. To check if the cutlets are done, pierce one with a fork—if clear juice runs out, the cutlet is fully cooked.
