It turns out that the original GOST recipe actually called for an increased amount of bread (up to 50% of the total mince volume), specifically grey or black bread, as well as the breadcrumbs of that era. That's when the result tasted exactly like those unforgettable flavors from childhood or youth. Remember it and prepare canteen-style cutlets in your own kitchen. Serve hot.

Prepare the ingredients.

Cut the black or gray rye bread, trim off the crust, and pour cold water over it. Let it sit for five minutes, then squeeze out the water.

Pass the onion and garlic through a meat grinder. Add to the minced meat.
