Step 1

Okara is a paste made from soy pulp—the residue left after soy milk has been extracted. It has almost no taste or smell and has a texture similar to cottage cheese. Okara is very rich in protein and is a low-calorie food. Place half a kilogram of soy pulp into a bowl.

Step 2

Wash and peel the carrots, potatoes, and pumpkin. Grate all the vegetables on a fine grater. Transfer them to a bowl with the flour.

Step 3

Peel the garlic and mince it using a garlic press. Add chopped onion, soy mayonnaise, and season with salt and pepper to taste. Mix thoroughly until completely smooth.

Step 4

The mixture should not be too runny, but neither should it be too dry. If it's crumbly, add more mayonnaise. Shape the minced meat into patties with your hands and place them on a work surface or cutting board.

Step 5

Heat vegetable oil in a frying pan. Dip each patty on both sides into breadcrumbs and place into the heated oil. Fry the patties for five minutes on each side over medium heat.
