
Squeak-free catfish cutlets
Description
The dish is prepared without unnecessary complications. Catfish is a peculiar fish: on one hand, it has few bones; on the other, being a river fish, it feeds on carrion and lives at the bottom, thus having a specific odor. However, there's one secret. If you want to cook catfish patties without the unpleasant smell, add raw potato with lemon juice to the minced fish. The potato won't overpower the pleasant fish flavor, but it will eliminate the undesirable odor. The finished dish can now be served.

Step 1

Prepare the ingredients. Cut the catfish fillet into small pieces. Do not grind it through a meat grinder, as the mince will become too homogeneous and thus too liquid.

Finely chop the onion and sauté it. Grate the raw potato and sprinkle it with lemon juice. Add the sautéed onion, minced garlic, potato, chopped herbs, and green onion to the fish. Season with salt and pepper, then mix well.

Heat a frying pan and add vegetable oil (preferably clarified butter). Shape the minced meat into patties and coat them in flour or breadcrumbs. Then fry the patties in oil for several minutes on each side until a crust forms and they turn golden brown. After that, simmer them under a closed lid for another 15–20 minutes. This will make the patties juicier.

You can serve the ready catfish patties, which have no odor, with vegetables; they are good both hot and cold.
