Minced pollock cutlets
Description
The recipe won't take much time. To prepare the cutlets, thaw the poultry slowly in advance to allow excess moisture to drain off completely. Then, carefully separate the meat from the backbone and skin using a sharp knife, and remove any bones. Grind the meat using a meat grinder or food processor. If using a meat grinder, choose the finest metal disc. You can add dill or a bit of cilantro to the minced meat, if you like, as well as various spices, such as smoked paprika or a little curry. Serve hot.
