
Chicken liver cutlets
Description
This recipe won't take much time. 1. To prepare chicken liver patties, start by soaking the liver in milk. It's best to cut the liver into small pieces, place them in a deep bowl, and cover with milk for at least 30 minutes. This helps remove any unpleasant bitterness from the liver. 2. During this time, prepare the other ingredients. Peel the carrot and grate finely. 3. Peel the onion and chop into small pieces. 4. Remove the liver from the milk and let it drain well, preferably using a colander. 5. Pass the liver and onion through a meat grinder. 6. Add eggs and grated carrot to the minced mixture. 7. Season with salt and pepper to taste. 8. Gradually add flour, mixing the ingredients thoroughly. The consistency should resemble sour cream. Once the mixture starts thickening, let it rest for 10–15 minutes. During this time, the flour will absorb excess liquid, allowing you to assess the texture. Add more flour if necessary. 9. Pour a little vegetable oil into a frying pan and heat well. 10. Use a tablespoon to form patties and fry them on both sides until golden brown and crispy. You can add one potato to this simple chicken liver patty recipe, but the patties are juicy enough even without it. Place the cooked patties on paper towels to absorb excess oil. Serve hot, although they are also delicious when cold. Serve warm.
