The story related to this dish tells of an 18th-century innkeeper named Ivan Pozharsky, who lived by the Moscow-St. Petersburg road. According to legend, once Emperor Alexander I visited the inn, tried the chicken cutlets, loved them so much that he ordered the dish to be named after the innkeeper. Place the chicken mince into a deep bowl, then add the cream, melted butter, salt, and spices. Put the bread into the milk, gently squeeze it, and add to the bowl with the mince. Mix the ingredients well.
