
Carp cutlets

The recipe won't take much time. Personally, I've loved river fish and all the dishes made from it since childhood, as I often went fishing with my dad and then helped my mom cook our catch. That's how I actually learned this recipe for carp cutlets, and to this day they remain my favorite. The ingredients here are so perfectly combined that it's hard to imagine anything better, and the cutlets turn out incredibly delicious and juicy—simply delightful. Thoroughly wash the fresh carp under cold water and clean it of entrails and scales, then wash it once again.

Now carefully separate the fish fillet from the bones.

Grind the fish, fat, onion, and bread previously soaked in water and squeezed, using a meat grinder.

Thoroughly mix everything until smooth.

Break the eggs into the minced meat, add semolina and minced garlic, salt and pepper to taste. Mix the mince very well once again and beat it slightly.

With wet hands, shape the prepared minced meat into small, neat patties.

Heat oil in a skillet, coat the cutlets in flour, and fry on all sides until golden brown. Serve the cooked cutlets with any side dish of your choice.
