
Turkey cutlets with rice
Description
You can use any turkey meat for these patties, but fillet works best. It gives the mince a more uniform texture, and thanks to the addition of water and rice, the patties won't turn out dry.

Step 1

Peel the onion and chop it finely using a blender or meat grinder. Rinse the turkey meat, cut it into pieces, and grind it the same way as the onion (if you are using a thigh instead of breast, carefully remove all excess: tendons, cartilage, bones beforehand). Then add the egg yolk to the same bowl.

Mix the yolk, ground onion, and meat in a bowl, add salt and pepper, and thoroughly mix the filling again until uniform.

Now, add a little water to the resulting mixture to make the patties juicier and more tender, then mix the minced meat with previously boiled and cooled rice.

Form patties from the resulting minced mixture. Ideally, to make a truly dietetic, not only tasty but also 100% healthy dish, turkey and rice patties are best cooked by steaming. But that doesn't mean you can't simply pan-fry them. The choice is always yours!
