Turkey cutlets

Description

The dish is prepared without unnecessary complications. Turkey cutlets turn out to be dietary, low-fat, and very appetizing. The cutlets are very easy to make – all you need to do is chop the meat, freeze it for half an hour, then grind it in a food processor and mix with aromatic ingredients. You can cook the turkey cutlets right away or freeze them for later use. You can serve them as a standalone dish with a side of your choice and fresh vegetables, or use the turkey cutlets as a filling for hamburgers – in this case, the snack will be very filling yet low in calories. The finished dish can be served at the table.

    1. If you are using turkey with skin and bones, separate the meat from the bones and remove the bones. Cut the thighs into 2.5 cm pieces and arrange them in a single layer on a baking sheet. Place in the freezer for about 30 minutes.

    2. Place the turkey pieces into a food processor fitted with a metal blade and pulse for 1 second 12–14 times. The largest pieces of meat should not exceed 3 mm in size. Transfer the meat to a bowl. Add salt, pepper, Worcestershire sauce, and mustard, then mix well. Divide the mixture into 4 portions and shape into patties about 2.5 cm thick using your hands.

    3. Heat a large skillet over medium heat for 4-5 minutes. Add oil. Place the patties in the skillet and cook over medium heat until a dark brown crust forms, without moving them, for about 5 minutes. Then flip the patties and continue cooking until lightly browned on the other side, 4-5 minutes. Reduce the heat to low, partially cover the skillet with a lid to allow steam to escape, and cook for another 5-6 minutes. The internal temperature measured with a meat thermometer should reach 71°C (160°F). Remove the cooked patties from the skillet and serve immediately.
