Hake cutlets in the oven

Description

The dish is prepared without unnecessary complications. I don't prefer fried food, so I suggest baking hake cutlets in the oven. The cutlets are coated in breadcrumbs. If you don't want a crispy crust, skip the breadcrumb coating or cook them in a steamer until done. If you prefer fried fish cutlets, simply fry them in vegetable oil. To make them juicy, add vegetables to the minced fish. Which ones? I'll tell you next, so stay tuned. The finished dish can be served right away.

    1. At first glance, hake cutlets may seem dry, but that's not the case if you add vegetables: zucchini, onion, and carrot. Zucchini, in particular, not only adds juiciness to the cutlets but also enhances the fish's aroma. So, I had a hake fillet, which I cut into small pieces, removed the backbone, and picked out the small bones along the back.

    2. Grind the fish into mince using a meat grinder (it's not necessary to remove the skin from the fish). Grind the meat several times using the medium attachment.

    3. Then pass the sliced zucchini (or courgette), peeled and skinned, through the meat grinder.

    4. Pass the carrots and onions through the meat grinder several times as well.

    5. The total amount of the listed ingredients will yield about 10-12 patties. Combine all ingredients in a deep container.

    6. Be sure to add a slice of bread soaked in water (not in milk, otherwise the cutlets will be tough).

    7. I also passed the bread through a meat grinder. If you have a manual meat grinder, you'll handle this task even faster. Add salt, spices, and eggs, then knead until you get a homogeneous mixture.

    8. Spread the breadcrumbs on a clean surface and shape the patties one by one in them. I form them into a round, slightly flattened shape.
