
Buckwheat and minced meat cutlets
Description
The dish is prepared without unnecessary complications. This is an easy way to make buckwheat and minced meat patties. These patties can also be baked under a vegetable sauce, making them even more delicious. Serve the finished dish at the table.

About 30 minutes before preparing the buckwheat cutlets, start boiling the buckwheat in slightly salted water. At the same time, boil 4 eggs hard. Peel the onion, chop finely, and sauté in refined sunflower oil. Add one egg to the minced meat, season with salt (1 tsp) and pepper, then mix in the sautéed onion, trying to leave the oil in the frying pan.

Add the slightly cooled boiled buckwheat to the minced meat. Now mix thoroughly.

Now we proceed to preparing the egg filling for the cutlets. For this, peel the boiled eggs and grate them on a coarse grater, or finely chop with a knife. Add chopped herbs, a little salt—just a pinch—and sour cream to the eggs. Mix everything thoroughly; the cutlet filling is ready!

Form the buckwheat cutlets. Take a portion of the meat mixture and shape it into a flat patty. Place 2 tsp of the egg filling in the center. Then lift the edges of the patty and cover the filling with another layer of meat mixture, completely enclosing the filling. Before frying, roll the patty in breadcrumbs.

Fry in refined sunflower oil on medium heat on both sides. I got 8 large buckwheat pancakes. Serve for lunch with fresh vegetables or a vegetable salad.
