
Pink salmon cutlets
Description
You can make cutlets not only from fillet but also from a whole bird, by first filleting it. The addition of pork fat makes the cutlets juicy and tender; however, if you don't eat it, you can substitute with butter, using half the amount. You can use store-bought breadcrumbs, but it's better to make them at home using white bread or a roll.

Prepare all the necessary ingredients for making pink salmon patties.

Remove all bones from the salmon fillet, cut off the skin, and cut into pieces. Pass the fish through a meat grinder twice. Cut the fat into pieces and grind in the meat grinder as well.

In a bowl with the minced meat, break an egg and add finely chopped herbs. Peel the onion, finely chop it, and add it to the bowl with the fish mince.

Add breadcrumbs, salt, and black pepper to a bowl and mix thoroughly.

Beat the fish mince well and shape into fish patties. Pour vegetable oil into a frying pan and heat over medium heat. Place the patties in the pan and fry until cooked through, about 4-6 minutes on each side over low heat, covered with a lid. Remove the cooked patties from the pan and serve immediately.
