
Pollock fillet cutlets

The dish is prepared without unnecessary complications. Today I want to share with you a delicious recipe for fish patties made from minced pollock fillet. Since I couldn't find ready-made fillet at the store, I bought whole fish, thawed them, and removed the meat from the skin and bones. I added the remaining ingredients according to the list, and ended up with incredibly tender patties! The key is to mix the minced fish very thoroughly—knead it well until it becomes as homogeneous as possible, so the patties hold their shape during frying. If your mince turns out too runny (which sometimes happens when the fish contains a lot of water after thawing), add a couple of tablespoons of flour. It won't affect the taste, but it will help the patties keep a perfect shape! I got 8 large patties. Good luck! Serve the dish warm.

1. Prepare the ingredients. Since I bought whole fish instead of fillets, I took 1 kg. The weight given in the ingredients is already for cleaned fillets.

2. In a small bowl, combine sour cream with soy sauce and water. Add breadcrumbs, mix well, and let them swell.

3. Cut the fish fillet into pieces, peel the onion and garlic. Pass everything through a meat grinder or use a food processor. Season the fish mixture with salt.

4. Add semolina, egg, soft butter, breadcrumbs, and ground black pepper or a mix of peppers to taste to the fish mince.

5. Mix the meat mixture well. Refrigerate for 30 minutes.

6. With wet hands, shape the mixture into patties and fry in vegetable oil until a golden crust forms.
