Description

The dish is prepared without unnecessary complications. As you have already understood, the recipe for beef meatballs does not include pork, yet the meatballs still turn out juicy, tender, and flavorful. The finished dish can be served at the table.

    First, preheat the oven to 200 degrees Celsius. Then pour the required amount of pasteurized milk into a small saucepan and place the pan on the stove set to medium heat. Warm the milk to 35–38 degrees and pour the warm milk over the bread, torn into small pieces by hand and placed in a deep bowl.

    Peel the onion and garlic with a knife, rinse under running water, and dry with paper kitchen towels. If you're not a big fan of onion and garlic, you can use less. Then place the onion on a cutting board and cut into smaller pieces, small enough to easily fit into the opening of a manual meat grinder. Leave the garlic cloves whole, and place the prepared vegetables into one deep plate.

    On the kitchen table, set up a manual meat grinder with a medium grid, place a deep bowl underneath, and grind the onion and garlic cloves through it.

    Afterwards, squeeze the softened bread to remove excess milk and mince it in a meat grinder, just like the vegetables. Now, add cumin, pepper, and salt to the bowl where you've processed the onion, garlic, and bread. Don't forget to add the ground meat and eggs as well.

    Mix the entire mass until a uniform consistency is achieved.

    Now we proceed to shaping the cutlets. Pour about 100–150 grams of breadcrumbs into a deep plate. Take a couple of tablespoons of the meat mixture, place it onto the palm of your hand previously moistened with regular tap water, and shape it into an oval or round cutlet up to 2 centimeters thick. Then transfer the meat patty into the bowl with breadcrumbs and coat it evenly on all sides. Form the remaining cutlets in the same way, placing them one by one onto a cutting board lightly sprinkled with breadcrumbs. Add more breadcrumbs to the plate as needed.

    Now take a non-stick baking sheet or a non-stick baking dish. Grease the container with 1 tablespoon of vegetable oil and place the patties on it, leaving a small space between each. Cover the dish tightly with aluminum foil, making sure there are no gaps, and place it into the preheated oven for 20 minutes. During this time, the meat will steam and cook almost completely through, both inside and out. Meanwhile, take a piece of butter and slice it into small pieces, one slice per patty. After 20 minutes, open the oven, remove the foil from the dish—you don't need to take it off completely, as it will be very hot; just fold it aside. Place one slice of butter onto each patty and return the dish to the oven for another 20 minutes, this time without covering it with foil. When the time is up, remove the dish with the cooked meat patties from the oven using a kitchen towel. Place it on the kitchen counter, let it cool slightly, then transfer the patties onto a serving plate.
