
Cutlets with a secret
Description
Indeed, the patties turned out incredibly juicy, tender, and aromatic with this recipe. And it's all thanks to one ingredient that, at first glance, wouldn't seem to add juiciness, but when combined with onion and bread soaked in milk, transforms into a delicious dish. Prepare all the necessary ingredients. I make the meat filling myself, using 300 g of beef and 200 g of pork. I prefer this combination the most. Peel and rinse the potatoes and onions.

First of all, soak the bread in warm milk. Leave it for several minutes.

Meanwhile, pass the onion and potato through a meat grinder. You can also grate them on a grater or chop them using a blender. However, I prefer the meat grinder option the most, as the vegetables quickly turn into a uniform puree. Add this puree to the minced meat, then season with salt and pepper to taste.

Slightly squeeze the bread to remove excess milk (or you may not squeeze it at all—the patties will turn out juicier) and pass it through the meat grinder as well. Add it to the meat mixture together with the egg.

Mix the resulting mixture thoroughly with your hands. It will be more liquid than regular meatball mixture. Don't worry, you've done everything correctly. Your patties will turn out juicy and tender.

Wet your hands with water. Shape small patties and place them on a frying pan. Fry under a lid for 5-7 minutes on each side over low heat.
