
Pike cutlets
Description

Step 1

Rinse the pike to remove the slime and fillet it. Cut off the head, tail, and fins, setting them aside for fish soup (be sure to remove the gills). Cut the body lengthwise along the belly and carefully clean out the internal organs; also remove the membrane along the backbone. Then, starting from the tail, cut along the back on both sides of the spine to divide the fish into two halves. Remove the backbone and the long bones from the belly area. You should end up with two skin-on fillets.

Then place each half of the pike on a board and use a spoon to scrape off all the flesh. Don't worry about the small bones; just make sure no scales remain.

Make the stuffing. Chop the onion and sauté in butter until soft and golden. Cut the loaf into medium pieces and dry in the oven; this way it will absorb moisture better and won't be sticky. Pour milk over it and let it sit for a while. Pass the fillet, onion, and bread with the milk through a meat grinder.

Then blend everything together once more to thoroughly break down the small bones and make the mixture more uniform. Now, lightly beat the mince, but don't overdo it, otherwise it will become too elastic. Gradually add the cream while mixing. Whip the egg white into a stiff foam. Add salt and white pepper to the mince (white pepper goes very well with fish).

Then gently fold in the beaten egg white. Generally, the recipe for pike cutlets doesn't always include eggs, but I decided to add them because the beaten egg white will make the cutlets fluffier and more tender.

Once again, lightly pound it a little more. The mince is ready, now we can shape it into patties. Form the patties, moistening your hands with warm water during the process.

Heat vegetable oil in a frying pan and fry the patties over medium heat on both sides until golden brown. Then finish cooking in the oven at 170 degrees for about 15–20 minutes. Serve the patties on a bed of creamy sauce, garnished with herbs and vegetables. Mashed potatoes make a great side dish.
