Description
Cocido is a very popular dish not only in Spain but also in Mexico and other South American countries. For preparing cocido, you can use not only pork but also beef; some local recipes even call for veal. The key feature is the use of fresh vegetables—cocido is made with fresh vegetables. First, rinse the ribs and cut them into cube-shaped pieces.

Slightly boil the pieces (bring to a boil, but do not cook through).

Now boil again (with fresh water). Prepare the broth.

Add bay leaf and spices to the broth. Meanwhile, cut the vegetables into medium pieces.

Add all the vegetables to the meat except for the zucchini.

When the vegetables have cooked for about 15 minutes, add the zucchini.

Now cut the cabbage into quarters - the cabbage should be young.
