Description

Homemade pastries for tea. You can make baskets in various shapes, sizes, and from different types of dough. They can be prepared using puff pastry, shortcrust, yeast, or non-yeast dough. The idea is to shape them so they can hold a filling. After all, baskets are ideally suited for this purpose. They will look great at a tea party or even a buffet. Serve them cooled or slightly warm.

    We knead the dough for our tartlets. Sift the flour with baking powder. Add the eggs. Use 2 eggs if they are small, or 1 if large. Add half the sugar portion. Add a pinch of salt and softened butter. Knead the buttery dough and roll it into a ball. Cover with plastic wrap and set aside for half an hour.

    While the dough is resting, let's prepare the cream. Place the sour cream in a bowl with the remaining sugar. Add vanilla sugar and cream thickener. Whisk with a whisk or fork until the consistency becomes jelly-like. Put the cream in the refrigerator.

    We proceed with the dough again. Roll it out to the minimum thickness, but make sure the dough does not fall apart. Take the molds and grease them with vegetable oil. Cut out circles from the dough and place them into the molds. Prick the dough with holes, then place in the oven at 180 degrees for 20-25 minutes.

    But let's not forget that our little baskets are meant to have cherries. I have some excellent fresh berries, so good that I hate to cook them. I'd rather eat them raw, in their natural state, to get the maximum amount of vitamins. Of course, you can use cherry jam instead. Now, let's fill our baskets. Take the sour cream filling and place 1-2 teaspoons into each tartlet. Wash and dry the cherries, then carefully remove the pits, taking care not to crush the berries. Place the pitted cherries onto the sour cream filling. Cherry-filled baskets are ready! They can be served with tea, coffee, cocoa, or kefir.
