Tartlets with canned apricots

Description

Homemade pastries to go with tea. The pastries are moderately sweet. If you prefer things sweeter, add 30 g more sugar and use milk chocolate instead of dark. Let the tart shells rest before serving—this step matters. Save the recipe and treat your loved ones. Serve with tea or coffee.

    Prepare the necessary ingredients.

    In a bowl, combine soft butter with sugar. Mash together with a fork.

    Add the eggs. Mix.

    Grate the chocolate on a fine grater and add it to the bowl.

    Add the flour, baking powder, baking soda, and salt. Start mixing the dough with a fork.

    As soon as the dough starts coming together in clumps, knead by hand. If necessary, add another 20–30 grams of flour.

    The finished dough should be soft and pliable. Shape it into a ball and refrigerate for 30 minutes.

    After the time has elapsed, remove the dough from the refrigerator. Measure out 12 portions weighing 50–60 grams each. Set aside the remaining dough. Roll the portions into balls and place them in tartlet molds. Spread evenly across each mold. In the center of each shell, place apricot halves.

    Divide the rested dough into 12 pieces. Roll each piece into thin ropes. Use them to form a lattice on each little basket. Chill the prepared baskets in the refrigerator for 20 minutes. Then bake in an oven preheated to 180°C for 25–30 minutes. Adjust for your own oven’s behavior.

    When time is up, take the baskets out of the oven. Cover with parchment and leave to cool in the pan. Rest for 8 hours.
