Cheese pastry cups
Description
You can make very delicious tartlets from cottage cheese dough for any filling. You will need good butter and fatty cottage cheese. We do not add sugar to the dough itself, so it turns out unsweetened. These tartlets can also be filled with meat, vegetable, or fish filling. Unlike simple shortcrust pastry, cottage cheese dough makes the tartlets softer, so they don't crumble as much. Quickly write down my simple recipe. The baked goods are ready. Serve at the table.
Instructions

Step 1

Sift the flour into the blender jar, add cold solid butter and cottage cheese. Blend at medium or high speed until crumbs form. Then add kefir or water. Blend again until the crumbly mixture turns into a dough-like consistency. Do not over-blend, otherwise the butter will melt, which we don't want.

Step 2

Wrap the shortcrust pastry in plastic wrap and refrigerate for half an hour. Meanwhile, mix the berries with sugar and starch. If using frozen berries, it is not necessary to wait until they are completely thawed. Divide the chilled pastry into portions according to the number of molds. Using a spoon dipped in cold water, press the dough into the molds to form little baskets.

Step 3

Fill the baskets with berries, place the molds in a preheated oven at 200 degrees for 30-40 minutes. If the dough is browned and golden around the edges, the baskets are ready.

Step 4

Let the finished cottage cheese pastry baskets cool down.

Remove from the oven and serve warm or cooled.
