    Prepare all ingredients.

    Cut the phyllo dough into squares of a suitable size. You will need 3–4 layers for one basket. Brush each layer with vegetable oil and stack them together.

    Place the squares of dough in a muffin tin.

    For the filling, blend the tofu with low-fat mayonnaise in a blender. Sauté the spinach until the liquid has evaporated, add it to the tofu, and season with salt and pepper to taste.

    Divide the filling among the tartlet shells.

    Halve the cherry tomatoes, place them in the tartlet shells, and press lightly. Bake for 20–25 minutes in an oven preheated to 175°C.
