Royal Vatrushka with Cottage Cheese

Description

The recipe won't take much time. In taste, the cheese curd buns with cottage cheese resemble a cottage cheese casserole or cheesecake. If you wish, you can enhance the recipe and add dried apricots, raisins, or prunes to the filling – it will only be better. Serve cooled or slightly warm.

    1. Prepare the ingredients for the pastry. The butter should be well chilled. The amount of semolina can vary from 3 up to 5 tablespoons depending on the moisture of the cottage cheese. In my pastry I added 5 tbsp. All spoons level!

    2. First, prepare the filling. For this, mix cottage cheese with sugar, vanilla sugar, semolina, eggs and sour cream in a deep bowl. Stir thoroughly so that the mixture is homogeneous and without large lumps. Add the leavening agent.

    3. Now make the base of the pastry and the top. For this, mix the flour with the sugar, and then rub this mixture with the butter. Cold butter easily forms lumps. The main thing is to work quickly with your hands so the butter doesn't melt.

    4. Take a baking dish, grease it with vegetable oil or butter. I first lined it with parchment, then greased it. Sprinkle two thirds of the flour crumbs and level them with a fork. Do not press them with your hands.

    5. Pour the filling, spreading it carefully over the entire surface of the flour.

    6. Cover with the remaining one third of the crumbs. Now carefully transfer the pastry to the hot oven. Bake at 200 °C for 40 minutes.

    7. As soon as the top of the vatroushka is nicely browned – it’s ready. Remove it from the oven, let it cool completely in the pan! This is important because the cottage‑cheese pastry can be fragile when hot.

    8. Remove the ring, free the pastry from the parchment. Cut into pieces and serve. Enjoy!
