Royal vatrushka with cocoa
Description
The recipe won't take much time. Such a pie is truly royal despite how simple it is to make: remarkably tender, light, and delicious. Crisp pastry with cocoa aroma and flavor, and a cottage cheese filling like soufflé. All this grandeur from everyday ingredients. Store the sliced royal vatrushka in a saucepan with a lid. The pie will stay fresh for 5–6 days. Serve it with tea or coffee.
Instructions

Step 1

Prepare the ingredients for making royal vatrushka.
- 2
Step 2

Put the flour and baking powder into a bowl.

You should end up with a crumbly mixture. It’s convenient to do this with a mixer, but the bowl should be deep enough so the crumbs don’t fly all over the kitchen. You can use a spoon as well.
- 7
Step 7

Prepare the filling for the vatrushka. Put the cottage cheese into a bowl.
- 8
Step 8

Add an egg.
- 9
Step 9

Add the sugar and vanilla sugar.
- 10
Step 10

Beat the cottage cheese mixture in a blender until smooth and creamy, with a consistency similar to soufflé.
- 11
Step 11

Spread half of the crumbs in the baking pan lined with parchment paper.
- 12
Step 12

Then spread out the cottage cheese filling.
- 13
Step 13

Spread the second portion of the crumbs over the filling.
- 14
Step 14

Bake the royal vatrushka in an oven preheated to 175–180 °C for 40 minutes.
- 15
Step 15

Let the baked royal vatrushka cool a little, then take it out of the pan. After that, cut into portions and serve.
