
Royal vatrushka
Description
Homemade baked goods for tea. This vatrushka is very delicious. The incredibly tasty crispy crust gives the vatrushka its special charm and unique flavor. The finished pastry will delight you and your loved ones. Fragrant and inviting, it will gather everyone around the table for breakfast in just minutes. Serve it with tea or coffee.

Step 1

Place the cottage cheese into a mixing bowl. I'm using 9% fat, paste-like cottage cheese. If you have grainy cottage cheese, rub it through a sieve. If the cottage cheese is too runny, hang it in cheesecloth to let the whey drain off. Add eggs, sugar, vanilla, and baking powder to the cottage cheese.

Add 4-5 tablespoons (without a heap) of semolina and knead until you get a smooth dough.

Transfer the resulting mixture into a greased pan. The pan does not necessarily have to be a springform. You can use a square pan or any other shape.

Mix several tablespoons of flour, 2-3 tablespoons of sugar, and 70 grams of cold butter. Rub the mixture with your hands until it becomes crumbly.

Place the resulting crumbs on top of the cottage cheese raw dough.

Preheat the oven to 180 degrees. Bake the royal vatrushka in the oven for about 30 minutes until golden brown. The top part of the vatrushka (crumb topping) does not brown intensely. Do not overbake the vatrushka. Check for doneness with a wooden skewer.
