
Korokke
Description
Korokke are Japanese potato croquettes that are essentially patties made from mashed potatoes with added meat, vegetables, or seafood. They can be served as a standalone dish or as a side. They pair well with tonkatsu sauce or Kewpie mayonnaise. The appetizer is ready. Serve immediately.

Step 1

1. Take the potatoes, peel them, wash them, and cut them into large pieces. Put them on to boil. As soon as they are done, remove them, mash until smooth, add cream, and let cool.

2. Sauté the onion in a small amount of oil. When it turns golden, add the ground meat. A few minutes before the meat is fully cooked, add salt, pepper, and cinnamon.

3. Combine the purée and the ground meat (strain the latter well beforehand to remove any excess fat), and mix. Shape medium-sized cutlets from the resulting mixture.

4. Put flour and breadcrumbs in separate containers and beat the egg with water. Using both hands (alternating: with one hand, evenly coat the croquettes in dry flour and breadcrumbs; with the other, dip them in egg), dip our cutlets first in flour, then in egg, and finally in breadcrumbs.

5. Fry in a large amount of oil. As soon as the croquettes turn golden brown, remove them and drain off the excess oil. The dish is ready.
