
Crackers with Bacon and Parmesan
Description
The pastry is made simply and quickly. With this recipe you will get about 18 crackers (or more if you roll the dough thinner). The crackers are easy to prepare and cook very fast from basic ingredients. Instead of bacon you can use pancetta, which pairs better with Parmesan. If you cut the dough to the thickness specified in the recipe, you get crackers; if thinner, the baked goods will resemble crackers.

1. Mix the flour, salt, grated cheese, and butter in the bowl of a food processor until a uniform consistency is achieved. Add about ¼ cup of cream (or half milk and half cream) and stir. Continue adding 1 teaspoon of cream at a time until the dough holds together well. The dough should not be sticky. Add the chopped bacon and mix in the processor a few times until it is evenly distributed throughout the dough.

2. Place the dough on a large sheet of parchment or waxed paper. Roll the dough into a long rectangle about 2.5 cm thick. Wrap it in the paper and freeze for at least 3 hours. Preheat the oven to 200 °C. Line a baking sheet with parchment paper or a silicone mat. Slice the dough into pieces about 6 mm thick.

3. Arrange the slices on a baking sheet, leaving about 1 cm between them. Bake until light brown, about 10 minutes. Cool on a rack. Serve the biscuits warm or at room temperature. Store the biscuits in a tin can for several days.
