Prepare the ingredients.

The smelt should be gutted and headless; rinse the fish and dry it with a paper towel.

Sear on both sides in a well-heated pan with enough vegetable oil.

Pour boiling water over the vegetables, add all the spices (nutmeg, cinnamon, allspice, cloves, bay leaf), salt, a little granulated sugar and vinegar, and cook for 3 minutes.
