
Smelt in the microwave

If the smelt is frozen, the best, quickest, and gentlest way to thaw it is in cold water. Simply cover the fish with water for about 15–20 minutes.

Clean the fish, remove the head, innards, and tail.

Rinse the fish under running water using a colander, then let the water drain off.

Line the bottom of the pan with parchment paper and brush with olive oil.

Make an onion "bed" by slicing the onion into rings and placing them on the bottom of the pan.
