Description
A delicious appetizer for any gathering. A small and tasty fish that can be fried or marinated. Smelt in marinade is a light and tasty appetizer that can be served with beer or with sandwiches made from black (white) bread, with vegetables and herbs. If you want something salty, this is the perfect option. Serve the appetizer to the table.

1. Clean the fish: cut off its head, slit the belly, and remove all the innards. Rinse it thoroughly inside and out, then place it in a sieve to drain off excess moisture.

2. Place a frying pan over the heat and pour in a little sunflower oil. Put the fish onto the hot surface and lightly fry it on both sides (just until it barely sets).

3. For the marinade: mix water with salt, sugar, pepper, and bay leaf. Peel, wash, and slice the carrot, add it to the marinade. Put everything on the heat, bring to a boil, then cook for 5–7 minutes. Remove from the heat, pour in the vinegar. Peel the onions and cut them into wedges, place the onions and fish in a container, and pour the prepared marinade over them. Leave for 24 hours. After that, the smelt is ready.
