
Smoked sturgeon
Description
A tasty appetizer for any gathering. Hot-smoked sturgeon is perfect for any festive table. At home, it’s very easy to make (you won’t even need a professional smoker): marinate the fish first, then smoke it on a rack right on a regular home stove. Serve with herbs and sauce.

1. Sturgeon is an incredibly delicious fish, and if such a treat lands in your kitchen, divide it into parts and make more than one dish. I left the head and tail for fish soup, and decided to hot-smoke the middle section.

2. Prepare the marinade: heat the water and add the spices and salt.

3. For spices, I recommend adding a pepper blend, salt, and dried dill. I also add lemon juice.

4. Place the large pieces of our fish in the marinade and leave overnight in the refrigerator.

5. Line the bottom of the kazan with foil and add wood chips. Pat the fish dry with paper towels.

6. Place the rack on top, lay the fish on it, and close the lid. Smoke for one hour.

7. Open the lid only after the fish is done.

8. When the fish has cooled slightly, slice it and serve at the table. You can serve it with sliced lemon.
