
Smoked ribs
Description
I'd like to point out that spices, like the sauce, are a matter of personal taste. You can use spicy or aromatic ones, or simply stick to the classics—salt and pepper, for example. It's also hard to specify the smoking time precisely, as it depends on both the temperature and the size of the ribs.

1. Wash the ribs, dry them, and if necessary, remove any membranes and excess fat.

2. Salt, rub with spices to taste, and let sit for 2–4 hours so the meat absorbs the flavor and aroma.

3. Then it's very simple: place the ribs on the smoker's grate and close the lid. Periodically check for doneness; when cut, no blood should come out.

4. At the end of the process, you can brush the ribs with barbecue sauce or any other sauce of your choice to make them even more appetizing. Before serving, carefully cut into portion-sized pieces.
