
Smoked pork fat
Description
The recipe won’t take much time. To prepare smoked pork fat, you need to make a brine, then boil the pork fat in it. Then let it cool, rub it with spices, wrap it in foil, and put it in the freezer. Of course, the pork fat should be cooled beforehand. If you plan to store smoked pork fat for a long time, take it out of the freezer before serving and let it warm up for about 10 minutes so it doesn’t crumble when slicing. It can be served warm or chilled.

Prepare all the necessary ingredients for making smoked lard.

Cut the pork fat into pieces approximately 6 cm wide, 5–6 cm thick, and 10 cm long.

Mix salt, liquid smoke, bay leaf, peppercorns, and onion skins in water. Boil over high heat for 2–3 minutes.

Place the sliced lard into the prepared brine.

Bring to a boil and simmer the pork fat for 40–50 minutes over low heat.

After cooking is complete, remove the lard from the pot and let it cool.

Peel the garlic and finely chop it.

Rub the boiled pork fat with red pepper, and then with garlic.

Wrap each piece of grated lard in foil and place it in the freezer. After the lard has chilled, you can begin the meal.
